Rum Cake


One of our IT guys at work gave me this recipe. His wife makes it for the office every once in awhile. I don't like rum or rum cake per se, but everyone else just gushes over it. So, just in case someone else likes this kind of cake...here you go.

Pre heat the over 325

CAKE
1 Yellow Cake mix
1 package of instant vanilla pudding mix
4 eggs
1/2 cup cold water
1/2 cup of dark rum
1/2 cup of olive oil

Combine all the above ingredients and mix to batter consistency. '

You need a 10 inch tube pan

Butter the pan and sprinkle 1 and 1/2 cup of sliced almonds on the bottom of the pan

Bake 1 hour to 1 hour and 10 mins

Once cake is cooked invert the cake onto a serving plate.

GLAZE

1/4 cup of butter
1/4 cup of water
1 cup of sugar

Bring to a boil and boil for 5 minutes and stir constantly. Remove from heat and add 1/2 cup of dark rum

Bring back to a boil and pour over the cake. This cake is best after a few days, the rum soaks really nice into it.

She suggests 2-4 days making this cake in advance before serving it.
