These are an Unleavened Bread must make every year! I first tasted these when Mrs. Orchard made them years ago, and I had JoAnn send me the recipe.
Parmesan Croissants
2 cups flour
3/4 cups (6 oz.) butter
2 cups small curd cottage cheese
1/8 tsp salt
1 cup grated Parmesan cheese
Lightly grease a cookie sheet. Combine everything (except Parmesan cheese). Roll out sections of dough into size of a salad plate. Cut into wedges like a pizza. Sprinkle Parmesan cheese generously. Roll up starting from the outside. Place on cookie sheet about 1 inch apart.
Bake at 400 degrees for 20-25 minutes.
Kids love hot dogs that are rolled up in the dough and baked (just make them bigger)!! And you can make this without the Parmesan if you prefer.

JoAnn Orchard will always have a soft spot in my heart. She taught me the YMCA and took me to dance with the Blue Knight at the after party of Medieval Times. And trust me, the Blue Knight was hot stuff (especially to my 9 year old mind ;)
